 These veggie-packed Summer Fritters are perfect for self-feeding and introducing your little one to new flavours and textures.

 And who said they're just for baby? Your whole family will love these too, so be sure to make plenty.

TOP TIP

These are great with a variety of soft dipping sauces or spreads alongside the fritters to enhance the taste and texture experience.

INGREDIENTS

  • 200g quinoa, cooked
  • 100g courgette, grated
  • 100g carrot, grated
  • 3 tbsp plain flour or whole wheat flour
  • 2 eggs, beaten
  • 1 teaspoon baking powder
  • ½ teaspoon ground cumin
  • 1/2 teaspoon coriander
  • 1/2 teaspoon parsley, chopped
  • Olive oil for frying

METHOD

  • 1 Mix everything other than the olive oil, together in a large mixing bowl.
  • 2 Heat the olive oil in a non-stick frying pan over medium heat.
  • 3 Take a spoonful of the batter and place it onto the frying pan, flattening it slightly to form a small fritter.
  • 4 Repeat to make several fritters, leaving space between each one.
  • 5 Cook the fritters for about 5 minutes on each side until golden brown and crispy.
  • 6 Remove the fritters from the pan and let them cool slightly before serving.
