TOP TIP: For your future foodies, why not experiment with adding spices such as paprika, cumin and coriander for your little ones to try?
- Olive oil
- 1 diced onion
- 120g fresh spinach
- A handful of fresh parsley
- 1/2 courgette grated and squeezed to get rid of some of the moisture
- 1 carrot grated
- 1 tsp nutmeg
- 100g grated parmesan
- 1 egg, lightly beaten
- 2 tbsp plain flour
1 Pop the fresh spinach into a food processor and whizz until finely chopped.
2 Gently sweat the onions, then mix with the other ingredients.
3 Shape into eight patties and fry gently in a pan for 6 minutes on each side.
4 These are great served in a bun with our homemade tomato sauce or served without a bun just as they are.
