This recipe packs a powerful veggie punch, and with its easy method combined with fantastic flavour, it makes for a true crowd-pleaser.
 
These are great served in a bun with our homemade tomato sauce or served without a bun just as they are.

 

TOP TIP: For your future foodies, why not experiment with adding spices such as paprika, cumin and coriander for your little ones to try? 

INGREDIENTS

  • Olive oil
  • 1 diced onion
  • 120g fresh spinach
  • A handful of fresh parsley
  • 1/2 courgette grated and squeezed to get rid of some of the moisture
  • 1 carrot grated
  • 1 tsp nutmeg
  • 100g grated parmesan
  • 1 egg, lightly beaten
  • 2 tbsp plain flour

METHOD

  • 1 Pop the fresh spinach into a food processor and whizz until finely chopped.
  • 2 Gently sweat the onions, then mix with the other ingredients.
  • 3 Shape into eight patties and fry gently in a pan for 6 minutes on each side.
