SWEET POTATO BROWNIES
Try these scrummy Sweet Potato Brownies - not only are they easy, this recipe is sure to get your family around the table in less than 5 seconds using storecupboard ingredients.
- 100g baked sweet potato
- 3 tbsp unsweetened cocoa
- 100g melted butter, or a nut butter such as almond butter or peanut butter
- 150g finely chopped dates
- 100ml hot water
- 2 eggs
- 150g self raising flour
- 1 tsp baking powder
- 1 tsp bicarb of soda
1 Bake your sweet potato and leave to cool.
2 Put the dates into a mixing bowl with 100ml hot water, add in the bicarb and baking soda, then leave to sit for 5 minutes.
3 Whisk all the other ingredients into the bowl, then pour into a lined baking tray and bake at 180 for 15 mins.
4 Leave to cool before cutting into squares and serving.
