BANANA AND BLUEBERRY BREAKFAST LOAF
TOP TIP
This can be served warmed up or simply sliced and eaten on the go.
It is a great lunch box filler so make one and slice it up, keep it all in a sealed container and it will keep for 3-4 days..
INGREDIENTS
- Babease Greek Style Yoghurt with Prunes and Oats
- 75g oats
- 100g melted unsalted butter
- 100g self raising flour
- 150g blueberries
- 2 large ripe bananas
- 2 eggs
- 1 tsp baking powder
- 1/2 tsp cinnamon powder
- 1 tsp vanilla extract (optional)
METHOD

1 Mash the bananas in a bowl then add in all the ingredients, other than the blueberries and the Babease yoghurt

2 Give everything a good stir to combine

3 Fold in the blueberries, leaving a tablespoon to decorate the top

4 Spoon half the mixture into a lined loaf tin then spoon in the yoghurt and add the other half of the mixture on top

5 Top with the leftover blueberries and bake at 180°C for 30 mins until a skewer comes out clean

6 Pop into a sealed container and this will keep for 3-4 days
