TOP TIP

❄️These are perfect for the freezer, just shape then and pop them into the freezer without the breadcrumb coating. They will be good for 3 months. Defrost and breadcrumb then roast.
🧺They're also great cold, so are perfect for on-the-go eating, and with lots of different flavours added in like paprika, chilli, and spices.

INGREDIENTS

  • 150g breadcrumbs
  • 3 potatoes (100g ish)
  • 2 sweet potatoes (100g ish)
  • 1 small courgette
  • 1 garlic clove
  • 1 carrot diced
  • ½ onion diced
  • A handful of fresh spinach chopped
  • Dried herbs (½ tsp tarragon, ½ tsp parsley, ½ tsp basil)

METHOD

  • 1 Peel and dice the potatoes and boil for 10 minutes until soft then leave to drain
  • 2 Sauté all of the vegetables in a little water or olive oil until they are nice and soft, this should take around 10 minutes
  • 3 Using a fork, mash the veggies and potatoes together then shape into croquettes
  • 4 Roll each one in breadcrumbs then bake at 180°C for 15 minutes
