BEST BAKED RISOTTO
INGREDIENTS
- 1 Babease Vegetable Risotto
- ½ onion diced
- 1 celery stick diced
- ½ butternut squash cubed
- ½ courgette grated
- 250g risotto rice
- 100g parmesan cheese
- 600ml no salt vegetable stock, hot
- Olive oil
METHOD

1 Put the olive oil in an ovenproof dish then add all the other ingredients other than the parmesan

2 Give it a good stir then pop on a lid or cover with foil and into the oven for 20 minutes at 180°C

3 Take out of the oven and stir in the parmesan, pop it all back into oven for another 5 - 10 minutes until the rice is lovely and soft

4 The risotto will be perfect for mashing or serve just as it is
