GINGER RUSKS

The perfect soothing treat for your teething tot! These Ginger Rusks are delicately spiced to develop palates even during this tough time.  

INGREDIENTS

  • 1 cup oat flour 
  • 1 cup uncooked quinoa flakes 
  • 1 cup sweet potato 
  • 1 tbsp coconut oil 
  • ½ tsp ground cinnamon 
  • ½ tsp ground ginger 
  • ½ tsp ground nutmeg 
  • peeled thumb of ginger grated 

METHOD

  1. Pre-heat the oven to 170ºC 

  2. Steam, or oven roast the sweet potato until soft 

  3. Mix all dry ingredients together in a mixing bowl 

  4. Add the cooked sweet potato and melted oil 

  5. Roll into small biscotti shaped bars 

  6. Bake for 15-20 minutes 

  7. Serve with some plain yogurt and/or jam if desired
