The perfect soothing treat for your teething tot! These Ginger Rusks are delicately spiced to develop palates even during this tough time.
- 1 cup oat flour
- 1 cup uncooked quinoa flakes
- 1 cup sweet potato
- 1 tbsp coconut oil
- ½ tsp ground cinnamon
- ½ tsp ground ginger
- ½ tsp ground nutmeg
- peeled thumb of ginger grated
Pre-heat the oven to 170ºC
Steam, or oven roast the sweet potato until soft
Mix all dry ingredients together in a mixing bowl
Add the cooked sweet potato and melted oil
Roll into small biscotti shaped bars
Bake for 15-20 minutes
Serve with some plain yogurt and/or jam if desired
