MEGA MINI BEAN CHILLI
❄️This is a great one for the whole familv so batch cook and freeze.
👨👩👧👦For adults in the house, just remove portions for your little ones and then season the rest for the grown ups.
🌶️For those with fiery taste buds, add in a touch of mid chilli powder or if you want a softer texture then simply replace the beans with red lentils.
- Babease Stage 2 Mexican Bean
- 1 carrot
- 1 onion
- 1 celery stick
- 2 garlic cloves
- green pepper
- 1 courgette
- ½ butternut squash
- ½ tin kidney beans
- ½ tin chickpeas (tinned in plain water, not salted water)
- 1 tsp paprika
- 1 tsp cumin
- 1 tsp cinnamon
- 1 carton of passata
- Olive oil
1 Sauté all the diced vegetables in a little olive oil for about 10 minutes until they are nice and soft then add the drained beans
2 Add in the spices and allow to cook for another 2 minutes before adding in the passata and Babease product
3 Cook at a simmer for 20 minutes then serve with rice and sour cream or yoghurt
