Stuffed prunes make a great snack and are so easy to make. They are packed full of vitamin K, potassium and fibre, thiamin and Omega 6. If you're feeling really adventurous, try dipping them in melted dark chocolate for a healthy treat. Make a plate up at the start of the day, and snack away!
INGREDIENTS
- 6-8 prunes
- 6-8 nuts of your choice (try pecans, walnuts or brazil nuts)
METHOD
- With a small knife, carefully remove the stone (if there is one) and pull open to reveal a small gap.
- Fill with one of the nuts, and place on a plate.
- If you have time, make a bigger batch andstore in an air tight container and eat within a couple of months.
