MUNCHY MUNCHY CARROTS
Finger food recipe - perfect for the whole family to enjoy with a delicious dip.
Finger foods help your little one with hand-eye coordination, pincer grip and chewing skills whilst also encouraging self-feeding. 🙌
INGREDIENTS
- 800g carrots, approx 10
- 1 tin of cannellini beans (in water, drained and rinsed)
- 100g feta
- 3 tbsp greek yoghurt
- 2 garlic cloves, whole
- 1 tsp ground cinnamon
- 1 tsp ground cumin
- Juice of ½ lemon
- A handful of fresh parsley
- A handful of fresh coriander
- Olive oil
METHOD

1 Put the beans onto a roasting tray and top with the carrots and garlic.

2 Drizzle over olive oil, spices and herbs.

3 Cover with foil tightly and pop in the oven (180) for 40 minutes until the carrots can be squished easily between two fingers.

4 Place the carrots on a tray to cool slightly

5 Make the Dip…

6 spoon the beans, garlic and herbs into a blender with lemon juice, feta and yoghurt, blitz until smooth.

7 Spoon the dip onto a plate and top with the carrots; garnish with finely chopped carrot tops.

8 Cut the carrots into finger batons or mash them with a fork to serve to little ones, and either cut them into quarters or leave them whole for larger members of the family.
