SLOW COOKER LAMB TAGINE

INGREDIENTS
- 400g diced lamb
- 1 tin of tomatoes
- ½ onion, diced 1 tbsp tomato puree
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp ground cinnamon
- 1 garlic clove, crushed
- 200ml no salt stock
- A handful of fresh coriander
- 6 apricots, diced
- Full-fat natural yoghurt, to serve
- Couscous, to serve
METHOD

1 Seal the lamb in a hot pan with a drizzle of olive oil, then pop it into the slow cooker.

2 Soften onion and garlic in the same pan, then add to the lamb.

3 Pop everything else in the slow cooker and give it a stir. Leave to cook for 2 hours on high or 4 hours on low. Alternatively, if you do not have a slow cooker, just cook the dish in a pan that has a well-fitting lid, and leave it to simmer for 2 hours before checking the meat is lovely and soft.

4 You can flake the meat easily for little ones.

5 Serve with rice or couscous and a dollop of yoghurt.
